Opened in August 2022, Ergo is the brainchild of bartending pioneer, Jimmy Barrat.
Taken from the Latin word for “therefore”, Ergo draws a philosophical thread that runs throughout the bartender-led concept from beginning to end.
Food is a quintessential part of Ergo and the borderless Mediterranean menu has been designed to be an epicurean experience that sits neatly alongside the bar program which sets the tempo at Ergo.
